Instructions: 1. Mix the yogurt, green onion, parsley, garlic, oregano, salt and pepper in a medium-sized bowl.
2. Add the chicken breasts and mix well to coat with the marinade. Refrigerate, covered, for at least 30 minutes or up to one day. 3. Preheat the broiler on high heat. 4. Place the chicken on a baking pan and broil 4 inches away from the heat for 4 to 6 minutes until lightly browned. Turn the chicken over and sprinkle with the feta cheese. Broil for 2 to 3 minutes until the chicken is cooked through and the cheese speckled with brown. Remove from the oven and serve on heated plates. Makes 4 servings, each according to MC 4: NOTES : Its tried but not quite true. We tried cooking this in our oven, under the broil burner for the time listed, but that just browned the chicken on the outside without cooking the inside at all. So then we turned on the lower burner at about 350 F and waited about 45 minutes (or longer? I forget) for the chicken to cook through. When the chicken was nearly done, we melted the feta cheese on top. The flavour was very good, but we hadnt expected to need nearly an hour to cook the chicken. Email this Recipe:
