Ingredients:
Amount Ingredient
6 x cloves garlic minced
1 lrg onion minced
1 tsp olive oil original was 1 tbsp
1/4 cup sherry optional or white wine
1/4 tsp allspice
1/4 tsp dried oregano
1/4 tsp dried basil
8 cup leafy greens cut into strips spinach/chard/beet greens/kale I used collard greens 1/4 cup parmesan cheese optional I did not use this
soy sauce to taste or salt
Instructions:
Instructions: Saute the garlic and onion in the olive oil. Add the sherry and the spices. Stir in the greens, and cook, turning occasionally until fully wilted, about 10 minutes.

Sprinkle on the parmesan cheese, if using.

NOTES : We both agreed that the collard greens were absolutely the best weve ever had - sweet (with no added sugars), no bitterness, and very tender.

I think the secret to both recipes was the addition of tons of garlic and allspice. Ive never used allspice in savory veggie dishes, and it was wonderful. No more limiting allspice to just desserts.
