3 tbl roasted-garlic oil divided
6 cup sliced mushrooms 1 pound
1/2 cup minced fresh onion
1 x clove garlic minced
1/4 cup dry white wine
2 tbl chopped fresh parsley
1/2 tsp salt
1/4 tsp pepper
32 x French baguette slices toasted
Instructions:
Instructions: Heat 1 tablespoon oil in a large nonstick skillet over high heat. Add mushrooms, onion, and garlic; saute 5 minutes. Add wine, parsley, salt, and pepper; saute 3 minutes or until liquid evaporates. Let cool slightly; finely chop mushroom mixture. Combine mushroom mixture and remaining oil in a bowl; toss well.

NOTES : To serve, spread 1 tablespoon mushroom mixture over each baguette slice.

Yield: 16 appetizer servings (serving size: 2 crostini).
