3/4 cup Confectioners sugar
1/4 tsp Vanilla
1/8 tsp Salt
1/2 cup Flour

Instructions: This is probably the oldest form of the waffle that we can find today. It is actually a thin wafer affair, covered with a light waffle pattern. The original irons came from France. Nordic Ware used to make such an iron, and I have one. They are great fun to use but the market will be the market.

Nordic stopped making them due to lack of demand. I hope that this effort will get them back in action. The recipe is from Nordic as well.

Beat the egg whites until stiff. Sift in the confectioners sugar, folding in very gently. Add the vanilla and salt, and then sift in the flour, again folding in gently. Finally, fold in the melted and cooled butter.

Place the iron on top of a gas flame at medium heat. Put one teaspoon of batter on the heated iron and turn the iron two or three times on top of the burner until the wafer is golden brown. It takes a little practice to get these going but they are delicious and it is worth the effort.
