4 x tomatoes
1 x cucumber
1 x red capsicum
1 x green capsicum
1 x onions, medium
2 x garlic cloves
400 ml tomato juice
1/10 tsp cumin, ground
1/4 cup mayonnaise
Instructions:
Instructions: Wash and clean the capsicum, tomatoes and onion and peel and seed the cucumber.

Reserve 1/4 of the capsicum and cucumber and cut into a fine dice for garnish.

Roughly cut the remaining vegetables and puree in a vitamiser with the garlic, tomato juice, cummin and mayonnaise.

Chill for 2 hours.

Season with salt, pepper and paprika and serve garnished with the diced vegetables
