Instructions: Wash and clean the capsicum, tomatoes and onion and peel and seed the cucumber.
Reserve 1/4 of the capsicum and cucumber and cut into a fine dice for garnish. Roughly cut the remaining vegetables and puree in a vitamiser with the garlic, tomato juice, cummin and mayonnaise.
