Instructions: Peel the tomatoes. Cut out the stems and seeds, taking care not to lose the juice. Puree. Soak the bread in water and vinegar until it forms a thick paste, add the tomatoes, and thin with more water as necessary. Add salt and a crank of fresh black pepper and chill well. Serve with a plate of diced garnishes.
