Ingredients:
Amount Ingredient
1 pkt farfalle (bow-tie) pasta - (16 oz)
2 lrg tomatoes seeded, and
coarsely chopped
1 lrg cucumber coarsely chopped
1 sm red bell pepper coarsely chopped
1 sm yellow bell pepper coarsely chopped
8 med green onions sliced
1 x green Anaheim chili seeded, chopped
1 can sliced ripe olives - (2 1/4 oz) drained
1/2 cup finely-chopped fresh cilantro
----------------- LIME VINAIGRETTE ----------------
1/2 cup tomato juice
1/4 cup olive or vegetable oil
1/4 cup lime juice
1/2 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: Cook pasta as directed on package; drain. Rinse with cold water; drain.

Make Lime Vinaigrette: Mix all ingredients.

Mix pasta and remaining ingredients in large bowl. Pour vinaigrette over salad; toss.

This recipe yields 14 servings.
