Instructions: Bring tomato juice to a boil in small saucepan. Completely dissolve gelatin in boiling tomato juice. Chill until slightly thickened.
Combine remaining ingredients in medium bowl; mix well. Stir into gelatin mixture. Pour into individual dishes or medium serving bowl. Chill until firm, about 3 hours. Makes 3 2/3 cups or 7 servings. NOTE: At the beginning of the recipe it suggests that this is a good salad to serve molded. Just be sure to spray mold(s) with a nonstick cooking spray before molding. (Trish) Email this Recipe:
