1 lb plum tomatoes peeled, seeded
1 cup cucumber peeled, seeded,
and diced
1/2 x jalapeno pepper seeded, diced
1/2 med red onion diced
1/4 bn cilantro chopped
1 can tomato juice - (4.5 oz)
1/2 tsp hot pepper sauce
Instructions:
Instructions: Combine all ingredients in a food processor and blend until smooth. Add more salt if needed. Refrigerate for 1 hour before serving.

This recipe yields 4 servings.

Serving size: 1 cup.
