Instructions: In a blender or food processor, blend together the eggs, sugar, baking soda, milk, and baking mix. Drain the raisins and place in a large bowl.
Pour the liqueur over the raisins and add the batter. In an omelette pan, melt the 4 teaspoons shortening on high heat and ladle 2/3 cup of the batter into the pan. Immediately reduce heat to low and spread 6 apple slices on top of the batter. Cover with a second 2/3 cup of batter and cook for 20 minutes on the first side. Raise heat to high, lift up the pancake, and melt 1 tablespoon of the shortening. Flip the pancake and cook for 5 minutes on the second side or until golden brown. Place in a warm oven and repeat the procedure for the remaining batter. Garnish each serving with 3 kiwi fruit slices, 1 strawberry, and the flowers.
