1/2 lb small red potatoes quartered
1 sm onion chopped
1/4 cup chopped celery
1/3 cup chopped turkey ham
2 tbl chopped fresh parsley
1/4 cup cider vinegar
2 tbl olive oil
1/2 tsp dry mustard
1/2 tsp sugar
1/2 tsp salt
Instructions:
Instructions: Combine the potatoes with enough water to cover in a saucepan. Bring the water to a boil and cook until the potatoes are tender, about 25 minutes. Drain and transfer to a large bowl.

Meanwhile, spray a small nonstick skillet with nonstick spray and set over medium heat. Add the onion and celery; saute until slightly softened, about 3 minutes. Combine the onion mixture, potatoes, ham and parsley; mix gently.

Whisk together the vinegar, oil, mustard, sugar, salt and pepper in a bowl. Pour the dressing over the potatoes; toss to combine and serve warm.
