Instructions: Here is the potato salad recipe
which I got from my very German former mother-in-law. The only modification I have made now that Ive gone very low fat is that I OMIT the 1/8th cup of oil. It still tastes good to me without the oil and I can eat all I want without feeling the least bit guilty. [Linda] Peel potatoes while hot and mash lightly w/ fork. Add liquids and other ingredients. **Consistency will be like wet mashed potatoes When it tastes about right, mix in 1/8th cup of cooking oil(Omit to be fat free) Mix well & transfer to serving bowl; Sprinkle top with black pepper; Cover and let chill overnight. P.S. I love this served with marinated cucumber slices on top! P.P.S. Unlike the other German potato salad, this is NOT served warm. Email this Recipe:
