Instructions: Clean spinach, leaving water on leaves. Place in saucepan with no water.
Steam 10 minutes on medium heat. Drain while spinach is steaming. Fry bacon crisp, drain. Cook onions in 1 tablespoon bacon fat. Add the onions, crumbled bacon, vinegar and salt and pepper to spinach. Toss. Top with chopped eggs. Email this Recipe:
