4 tbl butter
1/2 tsp lemon essence
2 cup sugar
4 cup flour
2 x eggs
2 tbl ground ginger
2 tbl milk
1 tsp cream of tartar
4 tbl treacle
Instructions:
Instructions: Cream butter and sugar until thick and pale. Gradually add the beaten egg. Continue to beat until thick.

Combine milk, treacle, bicarbonate of soda, and lemon essence.

Add to the butter mixture. Sift in flour, ginger and cream of tartar. Mix to lightly to form a smooth dough. Roll into walnut sized balls.

Arrange evenly spaced on a lightly greased baking tray. Bake 350 F 20 minutes.
