1 x pork tenderloin (12 oz)*
2 x garlic cloves minced
1 tbl grated fresh ginger
6 tbl chicken stock
2 tbl dry sherry
1 tbl soy sauce
1 tsp sugar
2 tsp cornstarch
3 tbl peanut oil
2 x yellow bell peppers seeded and julienne
2 x red bell peppers seeded and julienne
1 bn scallions sliced diagonally
3 tbl cooked black beans coarsely chopped
Instructions:
Instructions: * Cut into thin slices across the grain

1.Put the pork slices into a dish and mix them with the garlic and ginger. Let stand for at least 15 minutes.

2.Blend together the stock, sherry, soy sauce, sugar and cornstarch in a bowl, and set aside.

3.Heat the oil in a wok or frying pan and stir-fry the marinated pork for 2-3 minutes. Add the peppers and scallions and continue to stir-fry for another 2 minutes. Add the beans and sauce mixture, and continue to cook, stirring until thickened.

Serve hot, garnished with the cilantro.

Makes 4 servings.
