Instructions: Combine the ginger and the sherry or rice wine and put the mixture into a jar in the refrigerator until you are ready to use it.
It will keep for at least 2 months. This is simply sherry or rice wine flavoured with fresh ginger. The mixture works very well as a variation in recipes which call for sherry or rice wine.
