5 x cm cube fresh ginger
4 tbl distilled white
vinegar
4 tbl sugar

Instructions: Even though this is a japanese relish I keep it on hand to serve with Westernstyle roast lamb and grilled chicken.

Method

Peel the ginger and cut it crossways into very thin slices.

Stacking a few slices at a time together cut them into very fine julienne strips.

Combine the vinegar sugar and salt in a bowl and mix well until the sugar is dissolved. Put in the ginger and stir.

Set aside for at least 10-15 minutes.

Lift the ginger shreds out of the liquid before serving.

Serves 4
