Instructions: Chop ginger.
Sift flour and sugar into a bowl, mix in ginger, butter, egg and lemon juice. Press mixture evenly over base of well greased 16cm X 26cm lamington tin, press almonds on top. Bake in moderate oven for about 40 minutes or until golden brown. Allow to cool in tin and cut into bars when cold. Serve with afternoon tea. Email this Recipe:
