Instructions: Combine the ginger and garlic in a bowl.
Grate the limes finely and add the zest to the bowl along with the honey. Stir in salt and pepper to taste. Squeeze the juice from both limes into the bowl and beat well. Pour in the oil beating the dressing until well mixed. Just before using stir in the chopped coriander. Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using. Stir the chopped coriander into the dressing just before serving. This dressing has a fresh oriental flavor which complements fish shellfish duck and chicken as well as many leafy salads and lightly cooked vegetables.
