Instructions: Putall the ingredients exceptthe oil in a small heatproof bowl and mix them well.
Heat a wok or frying pan and add the oil. Continue to heat until the oil is almost smoking. Remove the pan from the heat and pour the hot oil into the bowl with the other ingredients. The sauce should sizzle for a few seconds and is ready for use. In this simple sauce the oil is heated and then poured overthe seasonings to bring out their full taste and fragrance.
