Instructions: Sift the flour and spice into a bowl.
Measure the golden syrup carefully, leveling off the spoon with a knife and making sure there is none on the underside of the spoon. Put into a saucepan with the butter and brown sugar. Stir over a low heat until the sugar has dissolved and allow to cool. Dissolve the bicarbonate of soda into a bowl containing the water, then add to the dry ingredients with the syrup mixture, egg and egg yolk. Mix together with a wooden spoon to form a soft dough. Roll out to a 6mm thickness. Cut out the gingerbread men and use the currants or sultanas to give them eyes. The excess pastry can be re-rolled and more shapes cut. Bake on a greased tray at 180 degrees C for 20-30 minutes. They can be boxed and wrapped, with maybe just their heads and arms showing for a fun effect! Description: This is a popular choice, but dont look for the ginger as most children dont like the taste! NOTE: This uses Australian measures, where 1 tablespoon equals *4* teaspoons (not the American 3). Email this Recipe:
