Ingredients:
Amount Ingredient
Sunflower oil for brushing
1 tbl soft brown sugar
4 med peaches, halved and stoned,
or, canned peach halves
8 x walnut halves
1/2 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp ground ginger
1 tsp cinnamon
1/2 cup molasses
1 x egg
1/2 cup milk
Instructions:
Instructions: Preheat oven to 350 F. Line a 9-inch springform cake tin with a round of parchment or wax paper; brush with oil and sprinkle with sugar. Arrange peaches cut-side down in the tin with a walnut half in each.

Sift together the flour and cinnamon. Beat together the molasses, egg, milk and oil and mix into to dry ingredients until smooth,

Pour the mixture evenly over the peaches and bake for 35 - 40 minutes, until firm to the touch. Turn out onto a serving plate and remove parchment/wax paper round.

Serve hot with yogurt or custard.
