3/4 cup all-purpose flour
1 tbl baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
3 lrg eggs separated
1/4 cup milk
1/4 cup unsulphured molasses
1/4 cup brown sugar - (firmly packed)
1/2 cup butter - (1 stick) melted
Instructions:
Instructions: Combine flour, baking powder, salt, cinnamon, ginger and cloves in small bowl. Beat egg yolks with wire whisk in medium bowl. Add milk, molasses and brown sugar; mix well. Gradually whisk in butter and flour mixture.

Beat egg whites in small mixer bowl on high speed until soft peaks form; fold into batter.

Cook in Belgian waffle maker according to manufacturers directions. Serve warm with curd.

This recipe yields 12 Belgian waffles squares.

Comments: Can also be cooked in standard waffle maker (makes about 24 standard-size waffle squares.)
