Ingredients:

2/3 cup honey
1/4 cup milk
1/2 cup sugar (caster)
1/2 tsp ground ginger
1/10 tsp cloves, ground
1 tsp bicarb of soda
Instructions:
Instructions: Heat milk and honey until honey is dissolved. Allow to cool slightly.

Place milk/honey mixture in a bowl, add the sugar and spices and the bicarb of soda. Beat well. Slowly add the flour and continue mixing until smooth.

Butter a cake tin and dust with flour. Pour in the batter. The cake tin should be about 3/4 full. Bake in a hot oven 200C/400F for about 50 minutes or until a knife inserted into the center comes out clean.

Cool on a wire rack and ice.

Serve with afternoon tea.
