6 cup assorted thinly sliced fruit such as peeled mangoes, apricots, peaches, pears, apples and or unpeeled nectarines
3/4 cup apricot nectar or orange juice
1/4 cup packed brown sugar
1 tbl quick cooking tapioca
1 tsp finely shredded orange peel
1 tsp grated ginger root
1/2 cup dried cherries
vanilla ice cream optional
Instructions:
Instructions: In a 3 1/2 or 4 quart crockery cooker, combine desired fruit, apricot nectar or orange juice, brown sugar, tapioca, orange peel and ginger root. Cover; cook on low heat setting for 4-5 hours or on high heat setting for 2-3 hours.

Add cherries; let stand, covered, for 10 minutes.

If desired, serve over ice cream and sprinkle with slivered almonds.
