Instructions: Remove seeds and peel from pumpkin;cut into thin slices. Marinate for 1 hour in lemon or lime juice. Beat egg whites until foamy;combine with ground cinnamon. Drain each pumpkin slice; dip into egg mixture and saute in butter until lightly browned. Roll in sugar combined with ginger and nuts.
