1/2 lb yellow squash, diced
1/2 lb zucchini, diced
2 tbl butter or margarine
1 med onion, thinly sliced
1 med green bell pepper, cut in 1/4" strips
1 med potato, chopped
1 tsp salt
1 tsp ginger, heaping
Instructions:
Instructions: Melt butter in large skillet. Add squash zucchini, onion, green bell pepper, potato, and seasonings. Cook and stir over medium heat until vegetables are slightly brown. Cover and cook until squash and zucchini is tender, about 6 minutes, stirring occasionally.

Makes 4-6 servings.
