1 lb Ostrich steak cut into 1" cubes
2 tbl Butter
4 tbl Orange liqueur
(or orange juice concentrate)
1 jar Apricot preserves - (10 oz)
Instructions:
Instructions: Heat preserves, orange liqueur and butter in small sauce pan until the butter is melted. Allow to cool. Place meat and marinade in a plastic bag; seal and marinate for one hour.

Thread cubes onto a skewer and grill over hot coals for 10 to 12 minutes, basting often with the marinade. (Skewers may be garnished with mandarin orange slice, cherry, bell pepper chunk or other colorful item seither before or after grilling.
