2/3 cup firmly packed brown sugar
1/2 cup Land O Lakes Butter softened
1 cup miniature semi-sweet chocolate chips melted
2 x eggs
1/2 cup all-purpose flour
1/2 cup applesauce
1 tsp baking powder
1 tsp baking soda
2 tsp vanilla
1/2 cup miniature semi-sweet real chocolate chips

1/2 cup miniature semi-sweet chocolate chips
1 tbl Land O Lakes Butter
5 tsp water
1/2 cup powdered sugar
1/4 tsp vanilla
Instructions:
Instructions: Heat oven to 350 F. In a large mixer bowl, combine brown sugar and 1/2 cup butter. Beat at medium speed, scraping bowl often, until creamy (1-2 minutes). Add 1 cup melted chocolate chips and eggs; continue beating until well mixed (1 to 2 minutes). Add flour, applesauce, baking powder, baking soda and 2 teaspoons vanilla. Reduce speed to low; continue beating, scraping bowl often, until creamy (1-2 minutes). By hand, stir in 1/2 cup miniature chocolate chips. Spoon batter into 5 greased 5 1/2x3 inch mini loaf pans or aluminum foil pans. Bake for 35 to 42 minutes or until center crack is dry when touched. Cool 10 minutes. Remove from pan; do not remove if using aluminum foil pans.

( Bread can be frozen unfrosted. Remove from freezer; bring to room temperature before frosting.)

Meanwhile, in 2 quart saucepan combine 1/2 cup chocolate chips, 1 tablespoon butter and water. Cook over Low heat, stirring constantly, until melted and smooth. Remove from heat. Stir in confectioners sugar, 1/4 teaspoon vanilla and salt until smooth and creamy. Frost each loaf with glaze. Cool completely.

Yield: 5 mini loaves (50 servings)

NOTES : Variation: Glazed Chocolate Mint Mini Loaves: Omit 1 tsp. vanilla in bread and 1/4 tsp. vanilla in glaze. Add 1/2 tsp. mint extract to bread and 1/4 tsp. mint extract to glaze.

Bobbies Notes: This was wonderful. It made 4 mini cakes using the slightly larger pans I own.

This is one of the treats that I made early this year as I need several goodies for events that coming up. The use of applesauce instead of oil makes it healthier than most rich chocolate desserts. It is soooooo good. It is a have-to for chocoholics but everyone who has tried it wants the recipe.

I am going to make another recipe of this for small gifts. Give it a try.
