Instructions: 1. Cut the bacon into 1/2 inch wide pieces. In a large skillet, cook the bacon over medium heat until crisp. Remove from the pan and drain on paper towels; pour off the excess fat.
2. Pour the olive oil into the pan. Saute the onions over medium-low heat 10 minutes. Season with salt and pepper. Turn the heat to medium and stir in the brown sugar and vinegar. Continue cooking 8 minutes. Stir the bacon into the onions and continue cooking 2 minutes. The onions should be soft and almost syrupy. Email this Recipe:
