1 kg pork ribs
----------------- MARINADE: ----------------
1 tbl oyster sauce
2 tbl sherry, dry
1 tbl soy sauce
salt, pepper
1/10 tsp Chinese 5 spice
----------------- CHILI PLUM SAUCE: ----------------
2 tsp vegetable oil
2 tsp garlic, crushed
1 tsp ginger, crushed
170 ml plum sauce
1/3 cup water
2 tsp cornflour
2 tsp soy sauce
Instructions:
Instructions: Combine marinade ingredients in a large bowl, add ribs and mix well to coat. Allow to marinate 30 minutes.

*+ Chilli Plum Sauce:
Heat oil in a sauce pan, add garlic and ginger and cook gently 1 minute.

Add plum sauce and stir until combined.

Dissolve cornflour in water and add to pan with remaining ingredients.

Stir until sauce boils and set aside.

Coat each rib with plum sauce and place on a tray under a hot grill for 5 minutes. Turn and cook a furthur 5 minutes. Brush with plum sauce regularly to glaze.

Arrange on plate and serve with remaining sauce.
