Ingredients:
Amount Ingredient
1 whl broiler/fryer
1 gal Water
1 med Onion, chopped
1 cup Diced carrots
1/2 tbl Better that Bouillon, chicken flavored
1/4 cup Chopped fresh parsley
1 tsp Crushed bay leaves
1/2 tbl Crushed thyme
Kosher salt, to taste
Black pepper, to taste
Instructions:
Instructions: Cut chicken into pieces. Place chicken in large pot. Add water and bring to a boil. Lower heat and simmer for 10 minutes. Skim floating scum.

Add remaining ingredients. Keep simmering. Simmer until chicken is ready to fall from the bones. Remove chicken. Add all vegetables, seasoning and bouillon. Debone chicken and tear into small pieces or dice. Return chicken to pot.

Simmer 30 minutes. Meanwhile, prepare your favorite dumpling recipe. Add dumplings and simmer 30 more minutes, or according to dumpling recipe.
