4 x mackerel cleaned
sunflower or vegetable oil
lime or lemon wedges to serve

5 x cloves
1/2 tsp cumin seed
1/2 tbl black peppercorns
6 x dried red chillies
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1 tbl paprika
1/2 tbl salt
5 clv garlic peeled
5 x cm piece fresh ginger roughly chopped
1 x shallot chopped
Instructions:
Instructions: To make the masala grind the cloves cumin pepper and chillies to a powder in an electric grinder.

Process with remaining ingredients to form a paste.

Preheat the oven to 190C/ 375P/Gas Mark 5. Make three or four deep diagonal slits across the body of each mackerel on each side.

Rub the paste inside the fish and then outside making sure it gets right down into the slits.

Heat a thin layer of oil in a roasting tin over the hob.

Fry the mackerel until browned on both sides.

Transfer to the oven and cook for a final 10 minutes.

Serve with lime or lemon wedges.
