Instructions: Combine beef with crumbs, lemon juice, lemon zest, thyme, salt and pepper.
Mix well. Form into 12 thin (4" diameter) patties. Place 1 tablespoon goat cheese atop 6 of the beef patties. Top each with remaining 6 patties. Seal at edges to enclose cheese.
