Ingredients:
Amount Ingredient
18 oz Soft goat cheese (room Temp)
3 tbl Softened unsalted butter
1/4 cup Whipping cream
3 lrg Eggs
1 cup + 2 Tbls. sugar
Baked pastry in 10" tart pan
(cooled)
----------------- Glazed apples: ----------------
4 lrg Tart apples (about 1 1/2 lb. Peeled, thinly sliced)
6 tbl Dark brown sugar
Instructions:
Instructions: Place rack in center of oven & heat to 325. Have baking sheet ready.

For filling, mix cheese, butter, cream, eggs & sugar in food processor until smooth. Pour into pastry & spread into an even layer. Place on baking sheet. Bake until puffy around edges & just barely set in center, 35-38 minutes. Do not overbake. Set on cooling rack to cool completely. Chill at least 45 minutes or as long as overnight. For apples, melt butter in 10" skillet. When hot, add sugar & cook over med high heat until foamy & sugar has been dissolved. Add apples & toss gently. Cover & cook until apples are just tender but still hold their shape, 2-3 minutes. Set aside to cool slightly. To serve, remove tart from pan. Overlap apple slices attractively in sprial pattern covering surface. Brush warm sauce from cooking apples over slices. Chill until ready to serve, not more than 5 hours.
