Instructions: The state of Maharashtra of which the capital is Bombay is on the west coast of India and has a tropical climate. Richly verdant it enjoys a good monsoon and hot languid summers. Maharashtra is an agricultural state which provides plenty of fresh vegetables rice mangoes coconuts jaggery peanuts and cashew nuts. The cuisine includes hot aromatic meat and fish dishes vegetables in coconut sauce or flavoured with spice blends like goda masala savoury tidbits and crisp crunchy sweets made of rice and jaggery.
Appearance and taste The masala is a black aromatic powder with a burnt sweetness which comes from the coconut in the mixture. Buying and storing Goda masala is not readily available in shops as it is made by just a few communities in Maharashtra. It is almost always made at home so just store a little at a time. Culinary uses As with most spice blends goda masala havours a variety of lentils vegetables and pulses. It can be added before or after the main ingredient to varv the taste from strong to subtle.
