5 x cardamom
1 x cm stick cinnamon
5 x cloves
2 x bay leaves
1 tsp sunflower oil
2 tsp white sesame seeds
2 tsp coriander seeds
4 tsp desiccated coconut
10 x black peppercorns
5 x cassia buds
Instructions:
Instructions: Remove the cardamom seeds from their husks.

Fry the cinnamon cloves cardamom and bay leaves in the oil until the cloves swell.

Dry roast the rest of the ingredients over a low heat until the coconut is dark brown.

Cool and grind with the fried spices until fine.

Store in an airtight container for up to 4 months.
