1 tbl Corn oil
1/4 lb Sweet potato vine, cut in three-inch lengths
1/4 lb Mushrooms, fresh/meaty, caps only, sliced
1 x Garlic clove, crushed
1 sm Carrot, julienned (1/3 c)
1 tsp Salt, or to taste
Instructions:
Instructions: Heat the oil in a wok or skillet. Add the vine and mushrooms and stir-fry over moderate heat for 1 minute. Add all the other ingredients and stir-fry for 8 to 10 minutes. Serve warm or at room temperature.

Serves 4.
