1 x recipe Ultralight Pastry Dough, see recipe
3 tsp cornmeal
1 x egg white
Instructions:
Instructions: Make the Ultralight Pastry dough through the second rise. Preheat oven to 350F.

Whisk together in a small bowl the egg white & milk.

Divide dough into 3 equal sized balls. On a floured surface, roll out each ball into a 14 inch circle, 1/4 inch thick. Sprinkle 1 teaspoon cornmeal on each of 3 cookie sheets. Lay one circle of dough on each sheet. Brush with egg wash. Let rise for 20 minutes. Bake for 15 to 20 minutes, until the tops are golden brown. Cool on a wire rack. Store in a sealed container.

Variation:
For deep dish pizza, after the final rise of the Ultralight Pastry Dough, top with The Whole Tomato Sauce (see recipe) & toppings & bake for 20 to 25 minutes. As soon as you pull it out of the oven, top with fat free mozzarella cheese.

Makes 3 loaves. Each loaf serves 4.
