2 cup cooked rice
2 cup Cheddar cheese -- shredded
3 cup grated carrots
2 x eggs -- beaten
2/3 cup milk
1 tbl minced onion
1 tsp salt
Instructions:
Instructions: Combine all ingredients, stirring well. Spoon into a greased 1 1/2-quart casserole. Bake at 350 degrees F. for 1 hour or until set.

Serves 6
