Ingredients:
Amount Ingredient
1/2 lb Yukon Gold potatoes peeled and diced 1/2"
1/2 lb sweet potatoes peeled and diced 1/2"
1 tsp kosher or sea salt
2 tsp balsamic or red wine vinegar (2 to 3)
1/2 cup mayonnaise (reduced-fat works fine)
1/2 cup sour cream (non-fat works fine)
2 tbl fresh flat Italian parsley chopped
1 x red onion chopped
1 stalk celery chopped
1/2 tsp coarsely ground pepper

2 tbl dill pickle chopped
Instructions:
Instructions: Combine potatoes and sweet potatoes in a saucepan. Cover with water and add 1/4 teaspoon salt. Bring to a boil over medium high heat, reduce heat to medium low and simmer until fork tender (12-15 minutes).

Skim off foam, drain gently and sprinkle potatoes with vinegar.

Combine mayonnaise, sour cream, parsley, onion, celery, and optional ingredients if using. Season to taste with remaining salt and pepper. Add potatoes and gently stir to coat. Serve warm or chilled.

Serves Four to Six
