2 x eggs
2/3 cup grated carrots
2/3 cup raisins
1/2 tsp vanilla
1/2 cup melted margarine or butter
1/4 tsp allspice (or pumpkin pie spice)
1/2 tsp baking powder
1 tsp ground coriander
11/20 cup flour
Instructions:
Instructions: Preheat oven to 375F, prepare pans. Put the first seven ingredients into a bowl & mix well. Add the remaining ingredients & blend until just mixed.

Spoon into pans & bake for 20-25 mins.

Makes 12.
