Instructions: To make mango salsa: Combine onion, minced garlic, tomatoes, chiles, olive oil, cilantro, rice vinegar and mango in a bowl and let sit for at least 1 hour.
To make roasted garlic: Wrap head of garlic in aluminum foil and bake at 350 degrees until soft, about 45 minutes. Peel and puree two cloves of the garlic into a paste. To make quesadilla: Heat large skillet to medium heat. Spread garlic puree over entire tortilla and then spread cheese uniformly over tortilla. Place tortilla in pan and let cheese begin to melt, fold tortilla in half and lightly brown both sides. Cut into four pieces. Arrange on plate and serve with mango salsa. Email this Recipe:
