Carefully peel pears, leaving stems attached. Cut in half lengthwise and scoop out seeds, along with a scant tablespoon of pulp out of each half. Rub with lemon juice to prevent discoloration. Cream Gorgonzola and butter together in a small bowl until soft and fluffy. Fill hollows of pear halves with cheese mixture and carefully stick the two halves back together.
