Instructions: Heat 1/2 cup of milk and the brown sugar in the top of a double boiler, until sugar is dissolved. Beat egg yolks well. Dissolve cornstarch in a little milk, until all lumps are out, then add remaining milk and blend into beaten egg yolks..Add mixture to milk and sugar in top of double boiler or cook on low heat to prevent burning, stirring constantly. Cook until mixture is thickened then cook 5 minutes LONGER, STILL stirring constantly.
Remove from heat and stir in butter. Pour into prepared graham cracker crust. Make meringue by beating egg whites partially and adding cream of tarter and sugar. Beat until stiff peaks form. Spread over top of pie, being sure the meringue is touching crust. Brown in 350-degree oven for 8 to 10 minutes. Cool slightly and refrigerate. OR instead of meringue make whipped cream out of 1/2 cup whipping cream, beaten, and add 3 to 4 tablespoons of sugar and a little vanilla.
