2 lb potatoes peeled, boiled and mashed
1/2 lb lean ground beef or lamb if you can get it
1/2 lb cabbage shredded as for coleslaw
1 med onion minced
3 tbl butter
Instructions:
Instructions: In a skillet, heat some of the butter and saute the onion until soft. Add the beef or lamb and cook it through, crumbling it up as you go. Bring a small pot of salted water to a boil and simmer the cabbage until just tender, about 10 minutes. Drain the cabbage well and then add it to the meat mixture. Season with salt and pepper and then turn it out into a lightly greased casserole dish. Combine the mashed potatoes and the remaining butter, then spoon it over the meat mixture. Bake uncovered in a 350 oven for about 30 minutes, just to heat it through.

NOTES : Hi There, I will send off this recipe for an authentic version of Colcannon that has been handed down through my family. I have fond memories of eating this dish as a child, it was the only thing my Grandad would cook (being as cooking was womens work to him!) it is very easy to make and really sticks to your ribs!!!
