Instructions: Cut watermelon rind into chunks, removing all pink meat and green outer peel. Boil rind in water, to cover, for 1 1/2 hours. After 1 hour, add alum. Make a syrup by boiling sugar, vinegar, and spices, in a spice bag, for 30 minutes. Add watermelon rind and boil for 10 minutes. Add a jar of maraschino cherries. Remove spice bag. Pour into hot sterilized jars and seal.
