1/2 lb beef stew meat trimmed, cubed
1 tbl vegetable oil
10 med fresh tomatoes peeled, cut up
2 cup tomato juice
2 med onions chopped
1 x garlic clove - (to 2) minced
1/2 tsp freshly-ground black pepper
2 tsp salt (optional)
6 med potatoes peeled, cubed
5 x carrots sliced
2 cup frozen corn
2 cup fresh or frozen green beans
2 cup frozen peas
3 x celery stalks sliced
1 cup sliced butternut squash
1/4 cup finely-chopped fresh parsley
Instructions:
Instructions: In a Dutch oven, brown meat in oil over medium-high heat. Add tomatoes, tomato juice, onions, garlic, pepper and salt. Bring to a boil; reduce heat to low and simmer 1 hour.

Add potatoes, carrots, corn, green beans, peas and celery. Cover and simmer 30 more minutes. Add squash; simmer 10 to 15 minutes longer or until meat and vegetables are tender. Stir in parsley and sugar.

This recipe yields 8 to 12 servings.
