3 cup all-purpose flour
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
2 cup diced Granny Smith apple (about 12 oz.)
1/4 cup chopped pecans
2 cup granulated sugar
1 cup applesauce
1 tsp vanilla extract
3 lrg eggs
Cooking spray

1/2 cup butter or stick margarine, softened
1 x (8 oz) block fat-free cream cheese, softened
1/3 cup powdered sugar
1 tsp vanilla extract
Instructions:
Instructions: To prepare cake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (flour through nutmeg) in a large bowl; stir with a whisk. Add apple and pecans; toss gently to combine. Make a well in center of mixture. Combine granulated sugar, applesauce, 1 tsp vanilla, and eggs in a bowl; beat with a mixer at medium speed until well-blended. Add to flour mixture. Stir just until moist. Spoon batter into a 13 x 9 inch baking pan coated with cooking spray. Bake at 325 for 55 minutes or until wooden pick inserted in center comes out clean. Cool completely on a wire rack.

To prepare icing, beat butter and cream cheese with a mixer at medium speed until smooth. Add powered sugar and 1 tsp vanilla; beat just until blended.

Spread icing over cake.

Yield: 16 servings.

After spooning 1/2 of the batter into baking pan, you can drizzle with Marzettis Fat Free Carmel Dip (as much or little as you want - you can find it in the produce section), then spoon on the other half of the batter. Before baking, you can sprinkle the top with 1/2 cup brown sugar mixed with 1 tsp cinnamon and eliminate the icing.
