Instructions: Cut off the top 1 inch of each apple. Set aside. Using a spoon, scoop out pulp from apple, leaving 1/2-inch shell. Reserve pulp.
Mix granola, cinnamon, nutmeg, raisins and chopped apple pulp. Fill apples with granola mixture. Place apples in a shallow baking pan and fill with 1 inch of water. Bake in a 400 degree oven for 25 to 30 minutes. Serve warm topped with sour cream or yogurt and sprinkled with brown sugar and nuts. This recipe yields 4 servings. Variation: Add 1/2 teaspoon peanut butter to granola before filling apples Tip: Cut scallops or points in top of the apple for a decorative touch.
